Curry and Black Bean Scallops From A Killer Cookbook #1: Holiday Recipes to Accompany The Chef Who Died Sautéing 2 tablespoons vegetable oil 20 large scallops 1 tablespoon chopped fresh ginger 1 garlic clove, chopped 1 teaspoon Asian-style hot chili sauce 1 teaspoon curry powder (or to taste) ½ cup black bean sauce 3 green onions, chopped Heat the oil in a large wok over medium-high heat. Add the scallops and cook 1 minute per side. Remove and set aside. Add the ginger, garlic, chili sauce, and curry powder to the skillet or wok and cook for 30 seconds. Add the black bean sauce and water and bring to a simmer. Return the scallops to the skillet or wok and cook 1 to 2 minutes more, or until cooked through. Toss in the green onions and serve.
