Rice Pudding

Bernice and Ariel have joined the authors on their cleansing diet. This is one way they get part of their daily serving of brown rice.

Serves 2

1 1/2 - 2 cups cooked brown rice
1/2 - 1 apple, chopped
1/8 cup mixed raisins and dried cranberries
1 cup rice milk, divided in half
1 teaspoon Splenda
1/2 teaspoon cinnamon

Mix the rice, apple, berries, Splenda, cinnamon and 1/2 cup rice milk together in a saucepan and heat until warm. Most of the rice milk will be absorbed.

Divide into 2 bowls.

Add 1/4 cup cold rice milk to each bowl before serving.
