Mushroom Casserole

A Recipe from Bernice's Kitchen

3 large sliced portabella mushrooms
2 tablespoons butter
3 sliced leeks
Salt and freshly ground black pepper
2 cups salsa (not too wet)
8 ounces bread crumbs
1/2 cup grated cheddar cheese
Preheat the oven to 375 degrees F.
In a casserole, place 1 layer of mushrooms and dot them with 2 teaspoons butter. Add a layer of leeks. Sprinkle with salt, pepper, and parsley. Cover with 1/2 cup salsa. Repeat this process to create 3 mushroom, butter, leek, and salsa layers. Cover the top with bread crumbs and a layer of grated cheese. Bake until the mushrooms are tender and crust is golden brown, about 20 minutes.
